Enjoy this Warming Winter Cleanse Soup to help your body flush toxins from the system and to boost your immunity.
Seasonal leafy greens, and spices such as ginger and turmeric, make this the perfect companion if you are looking to give a little TLC to your liver and your organs of elimination.
INGREDIENTS:
Approx 4 litres of spring or filtered water.
4 cups of mixed dark leafy greens such as kale, cavolo nero, Spring greens, chard.
1 medium butternut squash cut into small squares, unpeeled
1 leek cleaned and sliced
4 carrots, unpeeled, washed and chopped
1 small bunch of celery sliced, including the head
The florets of 1 head of brocoli,
4 cloves of garlic, whole and unpeeled.
6 dried shiitake mushrooms (reconstituted)
2″ piece of fresh ginger
1 tsp ground turmeric
2 tsp of cumin seeds
1 tspn of cumin powder
1 tspn of coriander powder
1.5 litres of water
Salt and pepper to taste
INSTRUCTIONS:
Add all the vegetables and spices to a pan.
Cover with spring or flitered water to about a few inches below the rim.
Bring to the boil then turn the heat down and simmer.
Cook over a low heat for 1.5 – 2hrs.
If necessary, add more water along the way so the vegetables are covered.
Add a good pinch of rock salt and pepper to taste.
Finally, strain the vegetable broth into another pan.
Enjoy warm cups of this broth throughout your day to support your cleanse programme or as part of a day of rest for your digestive system.
