This is a healthy dessert in which I skip the sugar that is often used in baked apples. You can of course add jaggery or muscovado sugar for some extra sweetness.
To serve 4 people, simply take 4 apples and halve them and remove the core.
I love to use Bramley apples for this recipe, but also use the sweet eating apples of my tree sometimes also.
If you have Pitta in your constitution you might like to opt for the sweeter eating variety.
Vata will do well with either and Kapha types can opt for the more sour cooking varieties like Bramley.
Fill the centre of each apple half with raisins and sprinkle with ground cinnamon.
Vata types can add a small teaspoon of tahini or a nut butter on top of the raisins. Hazelnut is delicious with baked apple and I have used it in the picture above. Pitta and Vata can use nut butters in the Winter.
Kapha types may like to opt out of the nut butters even in the Winter or add very sparingly for a rare treat.
In the Summer, I prefer the lighter qualities of tahini and this is ideal for Vata types.
Pitta however may find that the qualities of tahini are too warming and it is best to simply cook the apples with the raisins and cinnamon.
Place your prepared apples on a baking tray and cook in the oven, at gas mark 6 for about 15 minutes or until the apples are soft.
They are best served warm and I love them with non-dairy cream for an extra special treat.
Kapha and Pitta can favour a soya cream, Vata will do better with an Oat cream.
Enjoy and please let me know how you get on or any variation of bak ed apples you enjoy!
