This soup is ideal to give the digestive system a break when we know we have been going off track and over-indulging a ittle.
1 Organic large beetroot
2 Organic medium carrots
4 cups organic dark leafy greens (not spinach) such as curly kale.
2″ piece of fresh organic ginger grated finely
1 organic lemon squeezed
Drizzle of organic cold pressed olive oil
Wash and chop the root vegetables and add to a steamer with the dark leafy greens.
Steam over a litre of filtered water.
When soft, add the vegetables to the steaming water and place in a blender.
Serve by squeezing the juice of the fresh grated ginger, and adding the fresh lemon juice to taste, to the soup.
Drizzle a little olive oil over the soup and enjoy steaming hot!
