2 medium raw beetroots
2 large carrots
1 lemon/lime freshly squeezed.
2 tsp freshly grated ginger (1″ piece)
1/2 tsp dijon mustard
1/4 tsp ground turmeric or 1 tsp fresh fine grated turmeric
2 dessertspoons organic cold pressed olive oil
Pinch of rock salt and black pepper to taste
Fresh coriander leaves chopped to dress
Grate the fresh organic beetroot and carrots. IF using non organic vegetables, please peel first.
Lightly steam the grated carrots and beetroots.
Meanwhile, make the salad dressing from ½ tspn Dijon mustard, the juice of 1 lemon/lime freshly squeezed, the juice of 1 tspn of finely grated ginger, turmeric, olive oil, and a pinch of rock salt.
Place the steamed grated root vegetables in a salad bowl and toss in the dressing.
Sprinkle with organic fresh chopped coriander and serve.
Serve warm.
