

Enjoy this Warming Winter Cleanse Soup to help your body flush toxins from the system and to boost your immunity.
Seasonal leafy greens, and spices such as ginger and turmeric, make this the perfect companion if you are looking to give a little TLC to your liver and your organs of elimination.
INGREDIENTS:
4 cups of mixed dark leafy greens such as kale, cavolo nero, Spring greens, chard.
1 celeriac peeled and cut into small squares
2 medium sweet potatoes diced
2 medium parsnips, cut into half moons
1 leek sliced
4 carrots, cut into half moons
The florets of 1 head of brocoli,
4 cloves of garlic, whole and peeled.
6 chestnut mushrooms, sliced
2 tbspns of organic cold pressed sesame oil
2″ piece of fresh ginger, peeled and finely grated
1 tsp ground turmeric
2 tsp of cumin seeds
1 tspn of cumin powder
1 tspn of coriander powder
Good pinch of rock salt
1.5 litres of water
Extra salt and pepper to taste
INSTRUCTIONS:
Warm the oil in a pan and add the spices and salt
Add the sliced leeks, coat in the spices and saute until soft.
Add the root vegetables, mushrooms, garlic and broccoli florets mix to also coat in spices as far as possible.
Cover with spring or flitered water to about an inch or so below the rim of the pan.
Bring to the boil then turn the heat down and simmer for 15-20 minutes.
Once the root vegetables are softening, add the chopped dark leafy greens.
If necessary, add more water along the way so the vegetables are covered.
Add a good pinch of rock salt and pepper to taste.
Vata and Pitta types might like to add a little ghee on serving. Ghee has many health benefits, including carrying nutrients deep into the tissues and cells.
Enjoy this warming soup with unleavened bread such as a home-made chapati.
I like to enjoy it with a slice of rye sourdough and humous. However, to support a cleanse programme or as part of a day of rest for the digestive system, I’ll keep to the soup alone or enjoy it with a warm chapati.
